Some Summer Yummy



Brown Butter Banana Blondies!
( bake for the alliteration alone! )
Ingredients
  • 5 tablespoons butter
  • 1-1/2 cups firmly packed dark brown sugar
  • egg
  • egg yolk
  • 1-1/2 teaspoons vanilla
  • ½ cup pus 2 tablespoons white whole wheat flour
  • ½ cup bread flour
  • ¼ teaspoon salt
  • banana, mashed
  • ¼ cup toffee baking chips (optional)
Preparation
  1. Heat oven to 350*F. Line the bottom of an 8-inch square pan with buttered parchment.
  2. Add the butter to a small saucepan set over medium heat. Melt the butter, then cook an additional minute or two, stirring constantly, until it becomes golden brown and smells caramely and slightly nutty. Remove from heat and stir in the brown sugar. The sugar will melt and combine with the butter to form a thick, soft mass that feels a little like a tootsie roll. Let cool.
  3. Stir the egg, egg yolk, and vanilla into the cooled sugar. At the point, the batter will be thin and smooth. Add the flours, stirring until just blended. Fold in the mashed banana and toffee chips.
  4. Pour the batter into the prepared pan. Bake 25-35 minutes, or until the center is slightly springy and a toothpick inserted into the center comes out clean. Let blondies cool completely before slicing and removing from the pan.

housekeeping



The k+b and comments:

Something weird happened a few months back and I just SWAMPED with comments here, nut job crazy spam sort of strange oddly Russian comments, hundreds of them. So, when you try and leave me a comment of your own here, as some of yall have been - most likely they will get lost in the sea of Cyrillic word salad that is in there.
Sorry for any confusion or hard feelings.

sigh -

Major trauma day here for us today, as Koda just woke up with something wrong with his shoulder - limping really badly, "yelping " when he first puts weight on it.
He is eating and drinking just fine - tail still goes crazy when we walk in the room - but he is not feeling well.
I am a big pile of mess - Neil and I both agreed today that it is seriously a good thing that I did not have human children....

He really is a little better after a day of rest - If not better tomorrow, we will go to the vet.
