Ham
This was so darn good, and just perfect for today's cold grey weather. Rare for me to make anything other than vegan beans, but had a ham bone.
2# small white beans, soaked over night
2tbl vegetable oil
one slice diced bacon
1 cup (ish ) diced onion
ham bone
Get your oil and bacon in a soup pot, render the fat and add the onions, and let them go, nice and easy, you don't want a lot of color, 5-6 min, then add the whole ham bone. Let that go a while... 10 min, what ever, flip it a few times , get some crusty bits off all sides.
Dump in your soaked beans
While that's doing its thing, chop some celery, 2-3 stalks, couple of good sized carrots, more onion, really equal parts of all three... and a couple of cloves of garlic that I just crushed whole . Pour all that in with the now caramelized onions and bone, and just add tap water to cover. Bring to a rapid boil for a good 15 min, then turn down....
Don't add any salt for a good long while , because you never know how much the ham bone is going to have. Couple teaspoons dried Rosemary, Oregano and a good heavy sprinkle of Old Bay. Lots of black pepper, and just let it cook....a couple of hours.. then taste for salt.
A couple more hours, check see if the beans are where you want on the tender scale . Serve with a good splash of fruity olive oil and more black pepper.
