Some good pals over for a quick Monday ! night supper
Time to break out the Autumnal
- Roasted Chicken
- Mashed Sweet Potatoes
- Swiss Chard
- Red Cabbage w/apples and cinnamon
- Tomatoes ( as long as they are there, we will be eating them...)
I have gone a different way on roasting my chickens !
First bring the bird up to room temp for as long as you can - they are all wrapped and such, so sitting out for a bit ( couple/few ) hours is NOT going to hurt anything. Paint with olive oil then season well inside and out - and season liberally - what ever you like plus salt and pepper. This is Old Bay, Ground Coriander and Garlic Powder , with veggies , onions, celery and carrots INSIDE the bird - Then put a slice of cut up bacon over the breast meat.
Preheat to 375º and let him go for a good long time. I was blasting in a hot oven and cutting it down , cooking much faster, the low and slow is better. After it came out ( hour and forty five min ) I turned the oven up to 450º drizzled some melted butter over the bird and browned for just a few min...
A lovely time was had by all !
