DINNER




Crock Pot Cashew Chicken

My mother posted this on the Facebook this week sometime, and it looked so good that we had it for supper tonight.


Hmmm - it is good - when  you start you will think that the sauce is way to thin, but the second it hits the hot chicken, it quickly thickens up - where you think that there is no where near enough, but in the end , it turns out fine. I turned the crock pot off, added the cashews and let it sit for a good long while, maybe an hour. I did double the sauce - that you must do.

When I make it again, I will swap out hoisin sauce for the ketchup and add some lime zest and juice, but it is good just as it is. I might X3 the sauce and add cooked broccoli when I add the cashews.
