Dinner

One of those days where I just had to cook Indian food - hit the Spice World yesterday and cooked today. A tip for everyone that might want to try some South Asian food - shop at an Indian market for sure, you would spend a LOT more money in a regular grocery store and you still could not get all that you need. This meal is based on this recipe from Bonappetit - with additions , like I always do.

Onion, Ginger, Curry Leaves, Garam Marsala, Turmeric , Cumin, Coriander, Chilies, Garlic

This was not a throw together meal, you have to marinate the chicken for a good long time, overnight some say, I think that is too long, the chicken would start to break down. It can be tricky to find full fat plain yogurt. Then as will most Indian food, the curry ( sauce ) takes a good long time to cook . I added much less cream that the recipe called for but did add a can of coconut milk. Added more spices to the start of the curry as well.

Had a little G&T to accompany my British grilling

CHICKEN TIKKA
and
CHICKEN TIKKA MASALA
w/ some super hot mango pickles
