Chicken and rice with Chorizo sausage.
This is an easy , very economical, one pot dinner.
- Chicken , dark meat works best, legs thighs, but a whole chicken, cut up is fine , too
- Chorizo, this is a dried Goya product, look for it with the pepperoni in the store (can be left out.. but adds good flavor)
- Veggies: onion, carrot, celery, garlic - you can also use any color bell pepper and I would have used a hot pepper if I had one...
- 14oz can tomatoes with chilies ( or just plain tomatoes)
- chicken stock, one can ( you can use two cans or veggie stock or wine or just water or any combo that you want , a total 3 1/3 cup
- 2 pks - Carolina brand saffron yellow rice mix. This is where I cheat, you could get all these spices etc, BUT, this costs 79 cents, and works really well. If you use regular rice, adjust the seasonings and water to match.
- vegetable oil
- green olives and lime to garnish
- wash , dry and season (salt, pepper, old bay) chicken. Just legs works great, legs and thighs, what ever...
- chop veggies
- heat oil, about a quarter inch...brown chicken, well...
- pour off almost all of the oil, leaving any brown bits that stick, add Chorizo, cook for a couple of min
- add veggies, again, cook for a few min
- add rice, toss in veggie and oil to toast a little bit, then add tomatoes, cook a bit
- add liquid, bring to rolling boil, stir well, add chicken back, cover , lower heat...
- cook for about 20 min or so, scape the bottom of the pan a few times, I take the lid off half way through.. just cooks better
- add olives and lime, can so be left off. Cover and let rest for a while...
- ENJOY!
