Stuffed Chicken
Green Beans
Roasted Carrots with Cumin*

* VERY GOOD and SUPER EASY!  These are just very baised cut carrots, use the little snack carrots, small carrots  , just not coins - you want lots of surface space to get caramelized. 
Crush cumin seeds in a mortar and pestel - leaving all different size pieces of seed - not all powder. Put a sheet pan or small metal baking dish in a 450º oven while you are preping the carrots. 
Put carrots in hot pan, hit them with a little evoo and spread the cumin seeds.
30/40 min , you want some real color on them... enjoy!
