Autumn Coleslaw with Apples , Dates and Pecans

Read this on Alexis' blog a while back , got Thanksgiving on my mind. B.Day picked it up from here...
Thanksgiving in the burbs...

I doubled this, AND added Savoy Cabbage...
  • 3/4's cup roasted chopped pecans
  • 1 small head purple cabbage , greated very fine
  • 3 fuji apples in matchsticks ( from the recipe: 2 large slow-browning apples (about 1 pound total) Either Cortland, Empire, Fuji, Ginger Gold, unpeeled, cored and cut into matchsticks )
  • 3/4 cup chopped dates
  • 1/3 cup fresh cilantro - ( sure I used more, don't chop. whole leaves )
  • 1 large shallot sliced
For the dressing
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 tbl honey
  • s/p to taste
get veggies in the bowl, dress a few hours pre game
