LENT !

You eat soup between Mardis Gras and Easter -
You just do.

BLACK BEAN SOUP w/ CHOURICO
I really wish I would have done an old fashion step by step on this , because it was really good.

  • Soaked two pounds of beans over night
  • rendered three strips of bacon
  • added say, two cups diced onion, three stalks of celery, three carrots, table spoon of garlic and about 1/2 a hot chili - cook a while
  • salt , pepper , cumin ( cook out rawness )
  • Add drained beans
  • cook! - check for salt starting at about an hour....cook another hour
  • take about 1/2 the beans and blend till smooth, add some chicken stock if just too thick
  • dice your sausage, I used both the chourico and some plain old smoked , brown then bits first, add to soup... ( the black/brown bits on the sausage give good texture )
  • add sausage to beans and puree and heat through , enjoy!  ( if too thick add more stock )

  • breads, cookies, some yummy mac-n-cheese

 Neil gave a lovely little mini workshop on the use of social media for St. Johns

 Everyone had a nice time, I am sorry that we missed the first two, only one left now.
