Summer time baby love, love it, hate it, We spend six months under the ice, so this visit to the farmstand, and some hours picked veggies is reason to break out the confetti.
A little olive oil , salt /pepper, I had a room full of very fresh veggies,Courgette, Zucchini,Aubergine- was just going to go with the flavor of Summer, so very little seasoning. A red pepper and a poblano pepper for later, Summer at its best.
Was going to go total veggie, happy happy happy for me, but , since I am all about my friends and family, I added some grilled chicken.
Swiss Chard from Wegmans, brown rice, Grilled Chicken Breast w/ mixed roasted peppers, the grilled vegetables, and a heirloom tomato/arugula salad. All August fresh an happy.
A group of kids, asking for seconds and thirds on vegetables.. something done right.
