It's Tin or Aluminum for Dahn!

The celebration luncheon for Dahn's TENTH! anniversary as the rector at St Johns!

Cooking started on Saturday morning, with a football game in the middle of preparing for the meal. These pork roasts turned out really well. I marinated them in that Goya stuff that I buy... cant remember what its called.. comes in tall bottle and is sour orange based, very tasty on pork. Seared them on a hot grill, wrapped them in foil and put them back in the oven this morning.
I figured that I bought way too much food but a large turn out for church today. Very little left over.
The Pork loin, which I did cook/reheat to just a perfect pink, with some German apples , not sweet, but with Champagne vinegar and rosemary, sharp tasting, very good, and that salad that I have been making, which people just gobbled up. So easy, canned rrp, chick peas, black olives, rocket.. lemon/ olive oil.
Some gingery warm sweet potatoes and plain brown rice, would have made some gravy, but it was a lot of folks and time ran out
Very tasty curried squash, that I had a little bit of trouble with because some of my farm stand fresh picked squash had a hard sort of shell/skin.. had never really seen that in summer squash.. could have something to do with all the rain. This they did not dive into, some people loved it, but once some heard spicy and curry, others would not get near it. Haricot verts with olive oil, garlic and almonds
hot rolls with butter, tea, juice, cake...

Over sixty people, very little food left with lots of compliments.
