Baby Boc Choy ( 白菜 (小白菜 )

 I love this stuff. It comes in the BIG cabbage sized and these little ones. These are much cheaper than the big ones.... which really does not make much sense, but...cut off the little bottom core, discard. Then cut the white/root part away from the green...
 wash well!   for some reason these little cabbages are always very sandy.
 I only use a few drops of sesame oil, use as much as you  like ( it is very strong ) then I added maybe a teaspoon of olive oil. Add a couple of grated cloves of garlic and maybe a teaspoon of grated ginger... flower this for just a min... ( 45 sec or so..)
Add the white parts, mix well, cover cook for a bit.. not very long. IF you are using the large all grown up cabbages, cook the exact same way, you will just have much more white parts.... and they will need to cook a bit longer.

 only a couple of minutes
 Add the well washed but NOT dried green leaves..  you can chop these, but there is really no reason too.... salt and pepper , red pepper flakes if  you want...

Just a couple of min later, a lovely flavorful side dish!
I cooked in my much loved, often used Le Creuset Tagine, perfect for this sort of thing...
