HAPPY HANUKKAH!

Potato Latkes

Really, so gosh darn easy to make and so very tasty! Why don't we  have them more often ? No real recipe, I'm sure there are zillions out there, but really just peel and grate your potatoes, and half of that big onion, grated the same way.Do not break out your food processor unless you are doing them for all of Israel, they come out too watery. Once the potatoes are grated soak in some cold water for just a bit, you will be surprised how much starch comes out. Put your oil onto heat.
After soaking for just a couple of min, squish out some water with your hands and lay the grated potatoes on a clean tea towel, put the onions on top and roll up, like a jelly roll. Grab both ends and twist, twist, twist, getting the mixture as dry as you can. Then put in a clean bowl, add a couple of tbl of flour, one beaten egg, salt and pepper,just mix with your hands.
Again, I just use my fingers and place " fingers full " into the hot oil, and mash down a little with your spatula, cook 2-3 min.. till you see some brown and flip. Cook ever how long you want, for the crispy you like. I Like a little chewy in the center of mine... drain on paper towel.
Serve with apple sauce ( look for non sweetened or natural ) and sour cream. I would have done a little horseradish if I had any....
