Broccoli, Mushroom, and Cheese Breakfast Strata





This one started out as this really healthy thing from food network, BUT, it started getting weird and pricey, so I just made it up on my own.

INGREDIENTS:
little bit of oil ( olive, canola..)
3/4/5 cooling onions, sliced pretty thin
2 boxes of baby bella mushrooms ( could be any kind)
2 cloves garlic
12 eggs
3 cups whole milk
tsp mustard ( whole grain, dijon, something tasty, not yellow hot dog mustard)
french bread/batard/any yummy crusty bread
12 oz package of mozz
can of diced tomatoes with basil
bag frozen broccoli
salt/pepper/old bay/thyme

Cook down your onions for a few min.. 6-7 , on LOW, get them pretty translucent. Remove
same pan add mushrooms, no extra oil, cover , cook 4- 5 min, then add your garlic (  I use a microplane to do my garlic..) cook 1 min, remove.
let these cool a bit
mix up your custard, I added about a tea spoon of good whole grain mustard to this custard
slice  your bread.. about an inch and line bottom of well sprayed pan.
add veggies, broccoli, canned toms...
pour over custard, top with 1 bag of cheese, ( I have another bag , if it looks like it needs it tomorrow)
cover , in fridge over night
tomorrow, 350 an hourish...
