Dinner

Brown Rice, Spicy Veggie Filled Black Beans, Grilled Chicken
Artichoke Heart, Cucumber and Apple Salad
Working on getting back in the rut of healthy eating

What kind of dressing did you use on the artichoke/apple/cube salad?

a simple lemon vinaigrette , lemon juice, a little zest, Olive oil, s & P...

were the atrichokes marinated or in water?

and was the salad yummy? It looks and sounds interesting--just not something I can imagine taste together. If you say yummy, I'm gonna try it.

The cheaper ones in the can.. so they are in just brine, not marinade. Neil does not like the cheap 99cent bag of salad mix. He likes lots of stuff in his.. so this was just a pantry toss together salad, there was no plan. It was fine...

1000 years ago when I worked at CHOPS we served a chopped salad, that was just EVERYTHING.. eggs, fruit, veggies just all chopped the same size.. it may have been served over a little lettuce, but it was the STUFF that was the salad, this is sort of the same idea .
