Pear and Ginger Pie, Kyle am I,

Rarely do the food posts here or on the facebook get so much attention. Jane will bitch about me serving rice-a-roni, or something, but that is about it. The pear and ginger pie got quite a lot of response, so here is the real and true recipe.

  • about a week before you want to make the pie, be at Wegmans and see that 2# bags of pears are on sale for like 1.58! A super good deal, buy two for your house and two for  your pal Dahn's house. Get home, realize the pears are on sale because they are perfectly ripe that day, rare for pears and have a pear eating frenzy with your husband over the next few days. Juicy goodness!
  • Go over to your friends house about a week later and drink the vast majority of a large bottle of white wine. Notice pears in decorative bowl on kitchen table and say " hey, you should make a pie with these pears" Your friend then says " ok, make us one for desert tonight"
  • Finish large bottle of wine, open small bottle that was being saved for a special occasion,( we found this out when David came home ) comment with your friend how much better this wine is than the gallon size you just chugged down. Grab the closet 10 year old child, and set out to make pie.
  • microwave thaw your already bought for Thanksgiving ready made crust
  • get 10 year old child to start to peel overly ripe pears, realize you will not have enough pears and add some apples.
  • I'm going to say 5-6 pears ended up being usable and we used one big granny smith and a couple of basic small red eating apples. Could not find a lemon, so the zest of half an orange and the juice of the whole orange. 3tbl flour, 2.5 tbl sugar ( although I expect the child may have snuck in more ) , half a teaspoon of ground ginger ( could have been more, could have been less), dash of salt, look for cinnamon , find pumpkin pie seasoning, add a few shakes of that.  About a cap full of good vanilla .Your friend then says she thinks she has an old bottle of crystallized ginger, open, eat some, just dump the rest into the bowl. ( less than a quarter of a jar and the dregs ..)
  • drink more wine and have the child stir for all its worth
  • place pie shell #1 in deep dish pie pan, add filling, dot with 3tbs (ish ) butter, place other pie shell on top, making sure to seal.
  • make deal with 10 year old that she can cut the slits in the top of the pie IF she cleans up the mess we made.
  • add a few drops of water to one egg, beat very well, have child brush onto pie , drink more wine , sprinkle with sugar in the raw if you have it, if not regular sugar
  • 350 for about an hour.. watch the last 10-15 min that it does not get over browned.
  • enjoy!
